Suggested Go Spice Blends: Punky Reggae, Texan Smoke, Kansa, Mexica, Vermilion, Sofala Bahia
Go Spice Blends and Mac & Cheese is one of those combinations that may not naturally spring to mind, but after a customer recommended it, we just had to try it. And wowza, does it work!
Serves 3-4
1 tbsp cooking oil
70g red onion, finely chopped
3 tsp Go Spice Blend
600ml milk
50g butter
50g plain flour
350g macaroni
250g Cheddar cheese, grated
2 tbsp white breadcrumbs
2 tbsp Parmesan cheese, finely grated
Heat the oven to 200°/Gas Mark 6.
Heat the oil in a frying pan and then add the onion. Fry for about five to ten minutes, until the onion is softening. Add the Go Spice Blend and stir fry in the onion for about 30 seconds. Remove from the heat.
Heat the milk in a clean pan to almost a boil and turn off the heat. Melt the butter in a clean pan. Add the flour and mix well to form a thick paste. Cook the paste over a low heat for 1-2 minutes to cook the flour. Gradually add the milk to the paste, beating well with a whisk. When all of the milk has been added, simmer the sauce for a couple of minutes, stirring all the time. Remove from the heat.
Cook the macaroni in boiling water until it’s just tender. Drain well.
Stir the cheddar into the white sauce. Add the pasta and the spiced onion and mix well. Turn the mixture into an ovenproof dish. Scatter the breadcrumbs and the Parmesan over the top of the macaroni. Bake in the centre of the oven for about 15 minutes, or until just browned and the sauce is bubbling at the edges. Serve hot.
