Sukhothai Chicken Curry is a delicious, spicy hot dish which is really easy to make. Our Go Spice Sukhothai spice blend adds the flavours typical of Thai cuisine such as lemongrass and lime. We added coconut milk towards the end of the cook, but it works well without if you prefer.
Paste ingredients
50g shallots or red onion, roughly chopped
1 clove garlic, crushed
3-4 tsp Go Spice Sukhothai spice blend
1 tbsp cooking oil
2 tbsp water
¼ tsp shrimp paste
Main ingredients
1 tbsp cooking oil
500g chicken breast, sliced
50ml chicken stock or water
3-4 tbsp coconut milk
Blend all of the paste ingredients together into a paste. Heat 1 tbsp cooking oil in a large frying pan and add the paste. Fry for 1-2 minutes, until aromatic and then add the chicken. Fry for about 1 minute and then add the chicken stock (or water). Cook until the chicken is cooked through and reduce the liquid down if necessary. Stir in the coconut milk, heat through and reduce again if required. Serve hot.
