Pit Beans are a great side dish for a barbecue or as a light meal, perhaps on toast.
40g unsalted butter
1 medium brown onion, finely diced
5 cloves of garlic, finely chopped
½ tsp salt (or as required)
3 tsp Go Spice Blend
3 bacon rashers, chopped
200g tinned, chopped tomatoes
1 tbsp balsamic vinegar
415g can kidney beans
415g can baked beans
Place the butter in a large saucepan over a low heat to melt. Add the onions and garlic and fry gently for about 5 minutes until the onions are softening. Add the salt and the Go Spice Blend and stir for about 30 seconds. Add the bacon and cook for a couple of minutes, stirring regularly. Add the tomatoes and the vinegar, stir in and then turn up the heat a little.
Drain the liquid from the kidney beans and add them to the saucepan with the baked beans. Stir them in and turn the heat up to bring it to a simmer. Turn the heat down again and leave to reduce a little. Serve warm.
