Tabbouleh Salad is a wonderful addition to any Mediterranean or Middle Eastern feast. It’s healthy and looks good too.
60g bulgur wheat (dried weight), cooked
2-3 spring onions, finely sliced
small handful flat parsley, stalks removed and chopped
small handful fresh mint, stalks removed and chopped
1-2 tbsp olive oil
juice of half a lemon
½ tsp Go Spice Blend
pinch of salt
1 medium sized tomato, finely diced
1-2 tbsp pomegranate seeds (optional)
Little Gem lettuce leaves for serving
Put the cooled bulgur wheat into a large mixing bowl and add the spring onions, mixing well by hand and squeezing gently so that the bulgur wheat absorbs the onion flavour. Add the chopped herbs and mix in. In a small bowl, beat together the olive oil with the lemon juice, the Go Spice Blend and the salt. Add to the salad and toss well. Gently stir the tomatoes into the salad and cover and chill for about an hour in the fridge. Sprinkle with the pomegranate seeds and serve with the lettuce leaves.
