Sweet Sticky Pork Belly, is a tasty dish best served with with rice and peas.
Serves 2
½ tbsp cooking oil, such as rapeseed or olive oil
500g pork belly, cut into approximately 4 cm chunks
1 medium red onion, thinly sliced
100ml water
½ tsp salt
For the Go Spice sauce
2 spring onions, trimmed and roughly chopped
1 clove garlic, chopped
2 tbsp white wine vinegar
½-1 tbsp runny honey
2-3 tsp Go Spice Blend
1 tsp vegetable oil
For the sauce, place the spring onions, garlic, white wine vinegar, honey, Go Spice Blend and oil into a blender and liquidise.
Put the pork belly into a bowl and coat and mix with the sauce. Cover the dish and marinate in the fridge for a couple of hours.
Preheat the oven to 180°C/gas mark 4.
Add the ½ tbsp of oil to an ovenproof pan and warm on the hob over a medium heat. Add the onions and the marinated pork belly with all of the marinade and fry for 5-10 minutes, until the onions are soft and the pork browned. Stir regularly to prevent sticking. Stir in the salt and add the water, bring to the boil and then cover and cook in the oven for about an hour, until the pork belly is soft, sticky and cooked through. Check now and again, stirring, and add more water if required. Serve hot.
