Spiced Up Rarebit is a great variation of this classic Welsh cheese on toast recipe. These Go Spice Blends goes really well with cheese and offer an alternative to the usual Worcester sauce and mustard powder.
3 tbsp stout
175g Lancashire cheese, grated
2 egg yolks
2-3 thick slices of bread
1tsp Go Spice Blend
Warm the stout in a saucepan over a gentle heat and then add the butter a heat gently until it has melted.
Add the grated cheese to the pan (do not let it boil) and, when it has melted, remove the pan from the heat and leave the cheese mixture to cool to just warm. Check and stir occasionally to prevent it solidifying.
Add the Go Spice Blend and the egg yolks and beat into the mixture until smooth.
Meanwhile, preheat the grill to medium-high and toast the bread slices on both sides.
Spoon the mixture onto the toast and grill until bubbling and golden. Serve straight away.
