Southern Chicken Pasta uses our Go Spice Blends for coating for chicken in this delicious pasta dish. Our spice mixes are very versatile and you can add more of the mix for additional flavour before serving if you wish. Be inspired to experiment and vary or substitute any of the ingredients to suit your own palate.
500g pasta, such as linguine
4 tsp Go Spice Blend
4 chicken breasts, cut into cubes
4 tbsp olive oil
1 green bell pepper, deseeded and sliced
1 red bell pepper, deseeded and sliced
1 medium red onion, sliced
½ tsp salt
3 cloves garlic, finely chopped
3 tomatoes, chopped
300 ml chicken stock
100 ml white wine
2 tbsp cream or crème fraiche
A little flour to thicken the sauce (optional)
Cook the pasta while preparing the rest of the dish, until al dente, and leave to drain.
Sprinkle half of the Go Spice Blend over the chicken and toss to coat evenly. Heat half of the oil in a large frying pan over a medium heat. Add the chicken and stir fry until just cooked through. Remove the chicken from the pan with a slotted spoon and set aside on a plate.
Add the remaining oil to the pan and, when heated, add the peppers and onions. Sprinkle over the remaining Go Spice Blend and add the salt. Cook over a medium-high heat for a few minutes, stirring gently, add the garlic and cook until the vegetables are just softening but still a little firm. Add the tomatoes and cook for 1 minute, then remove all of the vegetables from the pan and set aside on a plate.
Leave the pan on a medium-high heat, pour in the chicken stock and the wine and cook for 3 to 5 minutes, stirring regularly. Reduce to a medium-low heat and pour in the cream, stirring constantly and cook until the sauce begins to thicken. Add a little flour or more liquid as required. Check the seasoning and adjust if necessary.
Finally, add the chicken and vegetables to the sauce, making sure to include all of the juices that have drained onto the plates. Stir and cook for 1 to 2 minutes until everything is heated through. Add the pasta, stir together and serve.
