The beauty of this easy to prepare South Asian Fried Chicken is that the chicken cooks in its own juices to produce a deliciously subtle, curry flavoured fried chicken.
4 chicken thighs
3-4 tsp Go Spice Blend
1 tbsp cooking oil
Pierce the chicken all over with a fork, coat with a little of the oil and rub the Go Spice Blend into all sides of the chicken until well coated. Place in a bowl, cover and place in a fridge for 1-2 hours. Once marinated remove from the fridge and heat the remaining oil in a saucepan over a medium heat. Add the chicken and fry, uncovered, for 10 minutes, stirring regularly to avoid sticking. Reduce the heat to low and cover the pan. Cook for about 40 minutes, stirring regularly, until the chicken is cooked. Serve.
