Scrambled Eggs with Feta is a delicious light supper or lunch dish. The spices add a light flavour and works beautifully with the cheese. Serve with hot toast. This recipe is ideal for experimenting with other Go Spice Blends.
4 large eggs
1 tsp Go Spice Blend
pinch of salt (optional)
1 tbsp cooking oil
60g feta cheese, roughly crumbled
1 tsp fresh dill, chopped
Crack the eggs into a bowl, beat them with a fork. Add the Go Spice Blend and beat well into the eggs. Add a little salt to taste if required.
Place a small frying over a low heat for about a minute and then add the butter and oil. When the butter has melted, add the feta and cook for about 20 seconds until the cheese starts to melt a little.
Pour the eggs over the cheese in the pan and scatter the dill over the top. Leave to cook for about 20 seconds, then lightly fold the ingredients together. Leave to cook for about 15 seconds and then fold again. Continue this until the eggs are almost cooked but still a little runny. Remove the pan from the heat and leave the eggs to finish cooking for about 1 minute in the pan. Serve straight away with toasted bread.
