Go Spice Blends are not only great as a meat rub, but also works really well with roasted vegetables. Try this out and enjoy.
1 kg squash or pumpkin (peeled and deseeded), cut into 4cm chunks
300g shallots, peeled and cut into halves or quarters
4-5 cloves garlic, unpeeled and crushed
2 tomatoes, chopped
4-6 tbsp olive oil
½ tsp salt
1½ tsp Go Spice Blend
400g canned chickpeas (240g drained)
small handful of fresh parsley, chopped (optional)
Preheat the oven to 190° C/Gas Mark 5. Put the squash, shallots and garlic into a roasting dish and trickle half of the olive oil over the top. Sprinkle with the salt and 1 tsp of the Go Spice Blend and toss well to coat all of the vegetables. Roast for 45-60 minutes, stirring and mixing the vegetables once or twice, until softened, caramelised and cooked to your preference.
Meanwhile, a few minutes before the roasted vegetables are ready, warm the other half of the olive oil in a saucepan over a low heat and add the remaining Saba spice mix and stir for one minute to release the essential oils from the spices. Add the chickpeas and toss in the oil for a few minutes until heated through. Combine with the roasted squash and shallots. Garnish with the chopped parsley if using, and serve.
