Juniper Berries have an aroma of pine, woody and resinous with citrus notes and a mild, but pungent flavour. They are used in European cuisine, particularly in the north, to predominantly flavour meat dishes, but also cabbage dishes. They can be rubbed, with salt and garlic, onto lamb, pork, game birds, and venison, or crushed and added to brines and marinades or chopped finely and added to stuffing and pâtés.
