Mace comes from the lacy covering found around nutmeg and has a similar taste although it is more delicate and a little sweeter. It can substitute for nutmeg in practically any recipe and is useful in preserving the colour of a dish that nutmeg may darken. Ground Mace is ideal for use in dairy dishes such as rice puddings or cheese sauces or added to savoury and sweet pies or mashed potato.
