Lemon Grass is an essential ingredient in South East Asian cuisine, particularly Thai, and is also much used in India. That said, it also works very well in many Western dishes. It’s subtle citrus flavour adds a lemony freshness to soups, curries and sometimes tea. Ground lemon grass is easy and convenient to use, is strong in flavour and a level teaspoon adds the same intensity of flavour as a single lemon grass stalk.
