Fenugreek Seeds have a sweet aroma, resembling the smell of dry hay but when briefly dry-roasted, the sweetness resembles maple syrup and caramel along with a slightly bitter, nutty taste. Fenugreek is a component of several spice mixes such as Ethiopian Berbere, Indian Masalas, South Indian Sambar Podi, Bengali Panch Phoron and Georgian Khmeli Suneli, to name a few. Vegetable and meat stews and sauces benefit from their ability to flavour and thicken liquids and they are much used in the dals and fish curries of South India and are an important component of dosa mixes.
