Coriander is mainly used alongside other spices and, as it has a mild flavour, often in larger proportions. It has a floral, lemony aroma and taste and is used in a variety of dishes, both sweet and savoury. The outer husk is ground with the inner fruit and can help thicken a sauce and, if coarsely ground, it works well as a coating for meats and fish. Coriander originated in the eastern Mediterranean region and western Asia and is often used to flavour marinades, pickles, soups, sausages, vegetable dishes, bread, cakes and biscuits.
