Blue Poppy Seeds and White Poppy Seeds are often used as sprinkles for bread and bagels or ground into a paste with honey for strudels and pastries. In India the seeds are ground and roasted to use as a thickener in sauces and in Europe and America they are added to salads to add flavour and texture. Poppy seeds are not easily ground but dry roasting helps to release aroma and flavour. The blue seeds are a little nuttier than the more mellow white variety.
