Mixed Bean Curry is a tasty and filling vegetarian dish based on a curry popular in the north west of India. Mixed Bean Curry is really quick to prepare and works well with many types of large beans such as red kidney, butter or cannellini.
Suggested Go Spice Curry Blends: Jammu, Kerala, Newar, Bangla, Shikara, Shimla
Serves 2-3
2 tbsp vegetable or olive oil
2 medium sized red onions, chopped
2 cloves garlic, crushed and finely chopped
½ tsp salt
2 tsp Go Spice Curry Blend
400g can red kidney beans (240g drained), drained
400g can butter beans (240g drained), drained
100 ml water
2 tbsp Greek style yoghurt
small handful fresh coriander leaves to garnish (optional)
Warm the oil over a medium heat in a large frying pan or karahi and cook the onions for about 10 minutes until starting to brown and soften. Add the garlic, salt and Go Spice Curry Blend and stir fry for a minute to release the essential oils from the spices.
Add the beans to the pan with the water and stir. Heat the beans through for a few minutes, adding more water if required or lightly mash a few of the beans to thicken the gravy if required. Garnish with coriander leaves and serve hot.
