Falafel Fritters – Falafel are a popular, traditional Middle Eastern dish. They are deep-fried and made from chickpeas and are often served in flatbreads with salads and tahini-based sauces. They may also be served individually as a snack or served with other small dishes. Go Spice Blends are a great seasoning for falafel, giving the fresh, warm flavours to these amazing vegetarian fritters.

Makes 16-20 balls
2 x 400g tins chickpeas (240g drained), drained
½ medium red onion, finely chopped
small handful of fresh parsley, chopped
1-2 tsp Go Spice Blends
½ – 1 tsp salt
2 cloves garlic, crushed and finely chopped
1 tsp baking powder
4 tbsp plain flour
cooking oil suitable for deep frying
Put the chickpeas into a large bowl and add the onion, parsley, Go Spice Blend, salt and garlic, and mix together. Process in a food processor until well blended, but not pureed. Place in a bowl and sprinkle in the flour and baking powder and mix in. For the best texture, the dough should be able to form a small ball and not stick in your hands. Cover the bowl and place in the fridge for about 1 hour.
Remove from the fridge and form the dough into individual balls about the size of large walnuts.
Add the oil to a deep pot or a wok, so that it is about 3-4 cm deep and bring to a high heat sufficient for deep frying. Fry one ball first to test. If it falls apart, add a little more flour. Fry several balls at a time for a few minutes until browned and then remove from the oil with a slotted spoon and leave to drain on a plate lined with kitchen paper. Serve warm or cold.
