Ethiopian Beef Wat. What? A ‘wat’ is an Ethiopian stew often flavoured with a dozen or so different spices. This dish is easy to make and tastes amazing. Try this recipe with other meats and you could use vegetables or pulses if you prefer.
Serves 2-3
Ingredients
2 tbsp vegetable or olive oil
1 large onion, chopped
2-3 tsp Go Spice Shala spice mix
4 tsp tomato puree
500g stewing beef, cubed
½ – 1 tsp salt
250ml meat or vegetable stock
Put the oil into a saucepan over a low-medium heat. When hot, add the onions and cook for 5 to 10 minutes until soft. Add the Go Spice Shala spice mix and stir fry for about 30 seconds.
Add the beef and cook for about 2 minutes until browned, then add the tomato puree and salt and mix in. Add the stock, bring to a simmer and cover the pan. Cook on a low heat for 1-1 ½ hours, until the beef is tender. Check occasionally, stir and add some water or more stock if required. Check the seasoning and serve hot.
